Bay window concerns /

Have a '71 Bay that I am in the process of bringing back to live. The engine was a 1500SP Type1 that had been align bored to 80k and was needless to say shot. Haven't decided what size engine or type of engine to put in it. I want to be able to travel long distances and be able to have reliabilty and be able to go 70mph. (Not asking for much am I?) Anybody got some good advice from experience??? Have a kick ass stereo to put in it. The body is pretty straight but will have to redo wiring because it was fried. Going to take out bench seats and customize interior. Don't want to put Westy stuff in it. Just want a bed to crash on. Picking up a bed mechanism saturday from a club member is parting out a '78 Westy. Hope to have running by spring 2008.
